Mix the semolina, coconut, sugar, baking soda, and the butter in a large bowl. Use your hands to incorporate the butter with the other. Basbousa are small cakes that are covered with syrup. The are perfect with coffee or tea.

Instructions to make Basbousa/Semolina cake:
  1. SUGAR SYRUP-Bring water,sugar and half lemon juice till all the sugar gets dissolved in the water.Cool to room temp and store in a glass jar.
  2. Blanch some almonds and keep aside dry.
  3. Take a large bowl and mix all the dry ingredients.
  4. Add in the veg oil and milk and combine the mixture well with a spatula.
  5. Now whisk an egg and vanilla essence into the above mixture. Mix well.
  6. Pour this cake mixture into the greased pan.
  7. Score lines on the mixture with a knife and make a pattern as shown in the picture.
  8. Bake @ 350 deg F for 30 mins.
  9. Take the pan out and cut right through the scored lines on the cake.
  10. Pour the cold sugar syrup onto the hot cake.
  11. Back into oven for another 15 mins.
  12. Cool the cake to room temp or serve hot.
