  2. Get 1 cup All-purpose flour / Maida -
  3. Take 1/2 cup Oil

  6. Prepare 1/2 cup Milk
  7. Get 1/2 tsp Baking Powder
  8. Make ready 1/4 tsp Baking Soda
  9. Prepare 1/2 tsp Vanilla essence - (Optional)
  10. Get For Rabdi
  11. Make ready 1 liter Milk
  12. Get 1/2 cup Sugar
  13. Take 1/2 tsp Elaichi Powder
  14. Get 8-10 Saffron strands - (soaked in milk)(optional)
  15. Make ready As needed Chopped nuts and red rose for garnishing (optional)

Slowly add little milk and the maida mixture and keep stiring. Gradually and alternatively finish the mixture and keep stiring. Malai Cake is a soft & spongy cake soaked in sweetened milk. It is an Indo - western fusion dish.

Steps to make Rabdi Cake | Malai cake | Steamed Rabdi cake:
  1. In a mixing bowl Mix, curd oil and vanilla essence for 2-3 minutes continuously by a hand whisk.
  2. Sieve and add all dry ingredients (All-purpose flour, Baking powder, Baking soda, powder sugar)
  3. Then mix the cake batter so everything mix properly.
  4. Add milk in 2 3 batches (Don't add once) and beat for 3-4 minutes (Don't overmix the cake batter)
  5. Your cake batter is ready.
  6. Transfer the batter in a Grease cake mold (I used glass mold if you don't have you can use the normal cake tin).
  7. Now take one pan and add one glass of water, preheat the pan for 10 minutes at low flame. - Then set the cake mold in a pan and bake for 40 minutes in low flame.
  8. After 40 minutes open the lid and check the cake by a toothpick. If it will come clear then your cake is ready, if it doesn't come clear then bake for 5-7 minutes more. - cool completely.
  9. For Rabdi: - - Add 1-liter milk in a pan - - Bring it to a boil by stirring - - once it's boiled stir continuously until milk reduces to 500 ml or half. - - Now add saffron milk green cardamom powder and sugar and mix well. - - Once your milk is thick, switch off the flam and your Rabdi is ready.
  10. Now prick the cake with a fork - - Pour rabdi mixture on it. - - Garnish with almond Pistacho and rose.

Malai Cake is a soft & spongy cake soaked in sweetened milk. It is an Indo - western fusion dish. Western-style cake soaked in Indian sweetened milk, flavored with saffron, and garnished with chopped nuts, It is inspired by Ras Malai which is a traditional Indian sweet. Cakes are commonly decorated with fresh cream, buttercream, or chocolate cream. Keep the flame low and mix continuously with a ladle.
