Heat oil in a deep-fryer or large saucepan over medium heat. In a large bowl, whisk together the flour, sugar, baking powder, cardamom, and salt. Make a well in the center, then use a rubber spatula to mix in the egg and coconut milk until the dough comes together. Mandazi are any doughnut-lover's dream come true: fluffy, hollow on the inside, mildly sweet in flavor, and crisp on the outside.

Mandazi and Chai is the ultimate breakfast in many Kenyan homes. Growing up in Kenya , it was very common to dunk a warm Mandazi, made fresh from the local bakery, in a hot cup of Chai (tea). My memories of Chai and Mandazi take me all the way back to my grandmother's kitchen during our school breaks. Mandazi is a slightly sweet form of fried dough that originated from East African street food.

Steps to make Mandazi:
  1. In a bowl seive flour,add sugar,cardamon,cinnamon and mix well
  2. Add the margarine to the flour mix and rub it well.
  3. In a separate bowl beat the egg,add milk and whisk well.
  4. Form a well In the flour mix,add your wet ingredients and knead your dough,transfer to a floured surface and knead the dough for 5-10 mins until its not sticking to your hands.
  5. Rub oil on your dough and put it back in the bowl,cover with a cling film or kitchen towel for 30 mins or more.
  6. Put your oil for frying on heat, roll your dough and cut into desired shapes and fry until golden brown on medium heat.(Rub Oil on your surface instead of dusting when rolling your dough to avoid your mandazi being hard.)
  7. Serve with a cup of hot african tea.

My memories of Chai and Mandazi take me all the way back to my grandmother's kitchen during our school breaks.
