  6. Prepare 1 1/2 tbsp vanilla extract
  7. Take 1 cup crushed pistachios

In a medium mixing bowl, combine graham crackers crumbs, sugar and melted butter. Toss until all crumbs are wet. Place in the freezer while you make the filling. Chill pan until ready to use.

  1. Beat cream cheese, vanilla extract and half the cool whip. (I used a food processor)
  2. Prepare both boxes of pudding mix with 2 cups milk and incorporate with cream cheese mixture
  3. Make 1 even layer of graham crackers on bottom of your pan
  4. Add thick layer of the pistachio mix and a layer of crushed pistachios
  5. Then add a second layer of crackers, pistachio mix and crushed pistachios
  6. Top it with the last layer of graham crackers! Then spread on the the rest of the cool whip!
  7. I crushed some left over crackers and added on top of the cool whip with some left over pistachios
  8. Refrigerate for 6+ hours! Better if left over night!

Place in the freezer while you make the filling. Chill pan until ready to use. Toast nuts in a dry small skillet over medium heat, tossing. An easy Pistachio Pudding Icebox Cake that is layer upon layer of creamy goodness. The cake is made with graham crackers, pistachio pudding and lots of whipped topping!
