This is the same receipe as the Kentucky Oatmeal Soice Cake which is a specialty at Atlanta's famed Horseradish Grill. The cake is more spectacular served with the restaurant's homemade caramel ice cream. We have made this cake alot over the past few years and it is always great. I do double the spices though.

  2. Take 1 1/2 cup boiling water

Put under broiler for a few minutes til bubbly. In a small bowl, cream shortening and sugars. Add oat mixture and egg; mix well. Combine the flour, baking soda, cinnamon and salt; add to creamed mixture and beat until combined.

Instructions to make Oatmeal Cake:
  1. Pour 1 1/4 cups boiling water over 1 cup oatmeal and a stick of butter. Let stand for 20 minutes.
  2. Beat together eggs and sugar, then add oatmeal mixture. Add all additional ingredients for the cake and mix well.
  3. Pour cake mix into a greased 9x13 inch pan.
  4. Toss ingredients for topping together in a separate bowl (not including powdered sugar). Before baking, sprinkle topping gently over cake. Bake at 350 degrees for 45 minutes.
  5. Once the cake is cooled 30 minutes dust with powdered sugar. Enjoy

Like this oatmeal cake my Southern Grandma made for us when I was a kid.
