Basically, this cake is the best of both worlds - cake and rasmalai together, and it's always a hit!! Rasmalai cake is made in two broad steps: the cake is steamed in the instant pot, and the sauce is made in a saucepan on the stovetop while the cake is steaming.

Ras Malai is made with homemade cheese known as "paneer" or "chana". It consists of soft paneer balls immersed in chilled creamy milk. Ras Malai has been always my favorite dessert for as long as I can remember. Back when I came to the U.

Instructions to make Rasmalai cake:
  1. Mix the vinegar into the milk and set aside. (You can also directly use the same amount of buttermilk instead)
  2. Dissolve the powdered sugar into the oil properly.
  3. To this, add the Rabdi essence if available, otherwise vanilla essence will also work. Add a desired yellow colour if you wish.
  4. To this oil-sugar mixture, sift in the dry ingredients.
  5. Then add the milk with vinegar and mix throughly to get a nice smooth batter.
  6. Bake this in your kadhai/cooker (without ring and whistle) for around 40-50mins on medium flame. But keep checking after 30 mins.
  7. Icing: Cut your cake into two or three slices.
  8. Place the base layer on your cake base/board. Soak it nicely in the milk of rasmalai.
  9. Then apply whipped cream. You can add yellow colour to the cream/ add some milk of the rasmalai (rabdi) to make it a rasmalai flavoured cream.
  10. Put some pieces of the rasmalai balls above this cream.
  11. Repeat the same with the next layer.
  12. Decorate the final topmost layer of your cake with whipped cream icing, chopped pistachios, rasmalai balls, etc.

Ras Malai has been always my favorite dessert for as long as I can remember. Back when I came to the U. S. many years ago, Indian cooking was a challenge as there were very few. Rasmalai Cake Recipe, is very easy and made by thickened milk added with butter in the cake base, whipped cream and in the layers. This taste will be too good.
