Combine spice mixture and beef in a resealable plastic bag; shake until well coated. Preheat an outdoor grill for medium-high heat and lightly oil the grate. Place beef, bell pepper, onion, and mushrooms in alternating order onto skewers. Suya or tsire is a spicy meat skewer which is a popular food item in West Africa.

To begin with this recipe, we must prepare a few components. You can cook suya using 6 ingredients and 3 steps. Here is how you can achieve it.

The ingredients needed to make Suya:
  1. Take Beef
  2. Prepare Spices
  3. Take Groundnut cake (Quli,qarago)
  4. Make ready Oil
  5. Take Lemon
  6. Get Tomato,cucumber, cabbage and onion

Suya is Nigerian street food at its finest—think nutty, spicy beef threaded onto skewers then grilled, the finished sticks cradled in paper or foil with a side of fresh tomatoes, sliced red onions, and a sprinkling of yajin kuli. Yajin kuli is made from yaji—a blend of chiles, ginger, garlic, onions, salt and other spices—and ground kuli kuli, which is essentially dehydrated and defatted. Add paprika, onion powder, ginger, pepper flakes and garlic powder; pulse until combined. Place beef in a large bowl or shallow dish.

Instructions to make Suya:
  1. First wash your beef and slice into thin slices,prepare your marinade with any spices of your choice(I used Maggi,ginger,oil,cloves,lil lemon and grinded groundnut cake) put the meat in skewers and marinade using the skewer because it will be oily for you to add to the skewer after marinating
  2. There are two ways to preparing this,either you marinade or you just add the ingredients, after putting the meat on the skewer,you mix the quli quli with maggi,cinnamon,ginger and onga,if U like u can add curry,then you spread it evenly on the meat,then sprinkle some oil and bake. Or you prepare your marinade with any spices of your choice(I used Maggi,ginger,oil,cloves,lil lemon and grinded groundnut cake) put the meat in skewers and marinade using the skewer because it will be oily for you.
  3. Leave to marinade for about 2 hours in the fridge, remove from the fridge and allow to rest for about 15 mins so it will melt,preheat your oven,and bake for about 30 mins or till soft,slice cucumber,tomato onion,green pepper and cabbage for garnishing

Add paprika, onion powder, ginger, pepper flakes and garlic powder; pulse until combined. Place beef in a large bowl or shallow dish. Drizzle with oil; sprinkle with salt. Add peanut mixture; turn to coat. Thread beef onto metal or soaked wooden skewers.
