  3. Prepare 2 tsp sugar

  10. Get 1 tbsp finely chopped ginger
  11. Get 1 1/2 tbsp finely chopped garlic
  12. Make ready 1/2 tbsp finely chopped green chilli
  13. Prepare 1 small onion sliced
  14. Prepare 1/2 capsicum sliced
  15. Get 2 tsp cornflour
  16. Prepare 1 tbsp chilli sauce
  17. Get 1 tbsp soy sauce
  18. Make ready 1 tsp ketchup
  19. Get 1/2 tsp vinegar
  20. Make ready 300 gms malai paneer
  21. Make ready 1/2 cup water
  22. Prepare 1/4 tsp salt
  23. Get 1/2 tsp black pepper powder
  24. Take 2 tbsp oil

The baos are soft and pillow-like in texture and the filling is a balance of sweet and spicy which goes well with the soft bread exterior. Chilli paneer bao and lotus stem and carrot baos were the other baos we had. Crunchy lotus stem and crispy chilli potato were nice and crispy. I liked the crunchy lotus stem more than the usual potatoes.

Instructions to make Paneer Chilli Baos:
  1. For the bao, take maida in a mixing bowl, add salt to it and mix well, then add oil to it and mix well till the mixture resembles crumb like.
  2. Now in a bowl take lukewarm water, add sugar and instant dry yeast give it one mix and let it rest for 5-10 minutes.
  3. Now add frothy yeast mixture to the maida and take everything on a clean kitchen counter and knead it into a smooth dough using remaining water if required, you will have to knead it for 15-20 minutes till you get a smooth dough.
  4. Keep the dough in a well oiled bowl and cling wrap it and rest the dough for around 2-3 hours or till it doubles in size, then after 2-3 hours gently punch down the excess air and take the dough on a clean kitchen counter.
  5. Now roll the punched dough into a log and cut 8-9 pieces out of it, then shape them into round balls and again cover them and rest for 30-40 minutes.
  6. After 30-40 minutes the dough ball must have risen again, now smoothen them with your palms and roll it into a oval shape chapati and keep them 1/2 inch thick.
  7. Now insert any parchment paper or cupcake liner into half of the dough and fold the other half and carefully place the Baos into the steamer and steam them on high flame for 15-20 minutes.
  8. After 18 minutes switch off the gas and let the boas cook for another 2 minutes in the steam, then carefully remove each boa, use a spoon if you have to. (Make sure you oil your steaming plate nicely so that the Baos don't stick to the plate)
  9. For the paneer Chilli stuffing, heat a non-stick pan, once pan becomes hot add oil.
  10. Then add finely chopped ginger, garlic and green chillies, saute them for 30 seconds, then add sliced onions and cook them for 2 minutes, then add sliced capsicum and again cook it for another 2 minutes. Add salt and cook everything nicely.
  11. Now in a bowl mix cornflour, soy sauce, chilli sauce, vinegar, ketchup and water make a paste and add it to the tossed veggies and cook this on low flame for another 3-5 minutes, then add paneer mix everything nicely, switch off the gas.
  12. Once the mixture comes to room temperature fill it in the steamed baos and serve. You can also re-steam the Baos with filling for another 1-2 minutes on high flame in a hot steamer. Enjoy.

Crunchy lotus stem and crispy chilli potato were nice and crispy. I liked the crunchy lotus stem more than the usual potatoes.
