Dry roast the cashewnuts and almonds and cut them into fine slivers. Put all the cut fruits in cold water to prevent oxidisation. Dubki wale Aloo, or aloo rasa is potato curry in thin spiced gravy. Dubki means dipping so in this curry potatoes are dipped in the gravy as you can see in the picture there are lot of gravy but less of potato.

  2. Add ghee to prepare cakes,1 tsp rest keep aside…add besan…roast…add little water,then try to bind it..if not add bit water more…allow water to soak besan…so that it swells n cakes be one fluffier n lighter later….
  3. Spread it on a greased plate…the consistency is like…burfi spread….now allow it to b set….on cool air..then after say half n hr…cut into pieces like burfi…but remember spread must have thickness to get cubes…not flat pieces…
  4. Fry it…in oil….like we do for besani gatte..
  5. Remove now add ghee n fry the masala,once oil leaves sides…add water n fried parwal…check salt….add chaunk…then add besan cakes… remember don't cook in water besan cakes for more than 4 mins..at best 5mins…
  6. Serve with rice…

Dubki wale Aloo, or aloo rasa is potato curry in thin spiced gravy. Dubki means dipping so in this curry potatoes are dipped in the gravy as you can see in the picture there are lot of gravy but less of potato. In dubki wale aloo we shouldn't not see much of potato but the gravy is important here it's very thin yet delicious. This potato curry goes well with roti, paratha, pulao or even plain rice, take your pick and serve with anything of your choice. I didn't added any garam masala in this recipe but you can add little of garam masala to make it more flavorful and also can add peas.
